Smokin' Greens
Ingredients
- 3 lbs collard greens
- 1 medium jalapeno remove seeds and chop
- 1 small onion
- 5 garlic cloves
- 4-5 cup veggie broth
- 1 1/2 tsp smoked salt or liquid smoke
- 1 dash baking soda
- 1 tsp red chili flakes
- seasoning salt to taste
- black pepper to taste
Instructions
- Line a large pot with veggie broth.
- Saute onions, garlic, and jalapeno on medium heat until fragrant and tender.
- Add in vegetable broth, red chili flakes, smoked salt, and black pepper. Taste and adjust seasonings as needed.
- Add your greens. Stir to make sure all the greens get coated. Add a dash of baking soda to help tenderize the greens.
- Reduce heat and bring to a simmer.
- Simmer for 1 to 2 hours, depending on how tender you like your greens.
- Serve!
Notes
Tip – Use a shorter cooking time, if you like brighter crunchier greens.

I made these for Thanksgiving and everyone could’ve sworn I threw a ham hock in the greens. So perfect with that smokiness from the salt.
