Chocolate Peanut Butter Baked Oats

  • 1/2 cup rolled oats
  • 1/2 ripe banana
  • 2 tbsp maple syrup
  • 1/4 cup non-dairy milk
  • 1/2 tsp baking powder
  • 2 tsp ground flax seed
  • 1 tbsp cocoa powder
  • 1 tbsp peanut butter


  • Preheat the oven to 400°F. Lightly grease a ramekin or oven-safe pan with cooking spray.
  • In a blender combine all the ingredient until smooth.
  • Pour the batter into the prepared ramekin. Add peanut butter on top and stir some in the middle of the batter.
  • Bake for 25-30 minutes. Test with a toothpick inserted in the center. It's ready, when it comes out with just a couple crumbs.
  • Allow to cool in the pan for 10 minutes before serving and frosting.


The baked oats will keep well in an airtight container for 2 to 3 days in the fridge.
