Teriyaki Veggie Brown Rice

  • 6 oz broccoli
  • 1/4 cup veggie broth
  • 5 oz mushrooms chopped
  • 2 cup cooked brown rice
  • 1/4 cup teriyaki sauce
  • 7 oz tofu


  • Drain and press the liquid from the tofu.
  • Pan fry tofu until crispy and set aside.
  • Steam broccoli for about 10 minutes and set aside.
  • Line a large pan with veggie broth. Add mushrooms and broccoli to pan and saute until tender.
  • Add tofu and teriyaki sauce to pan. Toss veggies and tofu until coated.
  • Serve over brown rice.


Plan Ahead – Prepare rice the day before or use frozen brown rice.
Extra Calories – Add 1 cup of chickpeas per serving.
Soy Free Option – Combine 1 tbsp coconut aminos, 1 tbsp maple syrup, 1 tbsp lime juice, 1 tsp ginger, and 1 tsp garlic powder instead of teriyaki sauce.
Soy Free Option – Use 1/2 cup chickpeas instead of tofu.
