Strawberry Pancakes with Chia Peach Jam

Ingredients
  

Strawberry Pancakes

  • 2 cup flour or gluten free flour
  • 3 tbsp sugar
  • 3 tbsp baking powder
  • 1 tsp salt
  • 3 tbsp cooking oil such as coconut or vegetable oil
  • 2 cup almond milk
  • 1/2 cup strawberries fresh or frozen

Chia Peach Jam

  • 3 peaches pits removed
  • 2 tbsp chia seeds
  • 1 tsp cinnamon

Instructions
 

Chia Peach Jam

  • Slice the peaches and blend them up in a food processor . I left the skins on, but you can peel them if you like. Once the mixture is smooth, add the chia seeds and place the mixture in the fridge for about 3-4 hours to set.

Strawberry Pancakes

  • Mix together the flour, sugar, baking powder and salt in a large bowl.
  • Add the non-diary milk and oil and mix until well combined.
  • Pour the strawberries into the batter and stir until combined.
  • Drop spoonfuls of batter onto a hot greased griddle and cook for approximately three minutes on each side. Serve with the chia peach jam.

Notes

Plan Ahead – Prepare the batter and chia jam the day before.
