Slice the peaches and blend them up in a food processor . I left the skins on, but you can peel them if you like. Once the mixture is smooth, add the chia seeds and place the mixture in the fridge for about 3-4 hours to set.
Strawberry Pancakes
Mix together the flour, sugar, baking powder and salt in a large bowl.
Add the non-diary milk and oil and mix until well combined.
Pour the strawberries into the batter and stir until combined.
Drop spoonfuls of batter onto a hot greased griddle and cook for approximately three minutes on each side. Serve with the chia peach jam.
