Spicy Chickpea Salad Jar
Ingredients
Spicy Chickpeas
- 1/2 cup chickpeas cooked
- 2 tsp Cayenne depending on spice preference
- 1 tsp maple syrup
- 2 tsp coconut aminos or low sodium soy sauce
Salad
- 1/2 cup quinoa cooked
- 1 1/2 cup lettuce add more greens if they fit in your jar
Dressing
- 1 1/2 tbsp oil free hummus
- 1 tbsp spicy brown mustard
- 1 lemon juice
- fresh black pepper to taste
- 1 tsp dried dill or parsley
Instructions
Spicy Chickpeas
- Preheat oven to 425 degrees.
- Add chickpea ingredients into a bowl and mix until well combined.
- Add chickpeas onto your pan and place in the oven for about 15 minutes or until desired crispiness.
Spicy Mustard Dressing
- Whisk all ingredients until creamy. Add more lemon juice if necessary.
Salad
- Load chickpeas, dressing, and the rest of the salad ingredients into your jar and store in fridge until ready to serve.
Notes
Plan Ahead – Prepare chickpeas the night before.
