Red Pepper Pasta

  • 14 oz roasted red peppers
  • 1/4 cup red onion
  • 1 cup vegetable broth
  • 1/2 cup coconut cream
  • 2 tablespoon Creole seasoning
  • 1 teaspoon onion powder
  • 3 cloves Garlic
  • 1 lb pasta of choice


  • Cook pasta to directions and set aside.
  • In a stock pot, bring red peppers, red onion, coconut cream and vegetable broth to a boil. It should take about 10 mins on a medium flame.
  • Drain, reserving liquid.
  • Place red peppers, garlic cloves and onion in food processor with 1/2 cup of reserved liquid. Pulse until smooth adding liquid in small amounts as needed.
  • Once smooth pour into stock pot, add seasonings and allow to simmer on low for 5 mins.
  • Serve on top of or mixed with favorite pasta. Top with vegan Parmesan cheese.
