Red Pepper Pasta

- 14 oz roasted red peppers
- 1/4 cup red onion
- 1 cup vegetable broth
- 1/2 cup coconut cream
- 2 tablespoon Creole seasoning
- 1 teaspoon onion powder
- 3 cloves Garlic
- 1 lb pasta of choice
Cook pasta to directions and set aside.
In a stock pot, bring red peppers, red onion, coconut cream and vegetable broth to a boil. It should take about 10 mins on a medium flame.
Drain, reserving liquid.
Place red peppers, garlic cloves and onion in food processor with 1/2 cup of reserved liquid. Pulse until smooth adding liquid in small amounts as needed.
Once smooth pour into stock pot, add seasonings and allow to simmer on low for 5 mins.
Serve on top of or mixed with favorite pasta. Top with vegan Parmesan cheese.
