Oil Free Chickpea Waldorf Salad



  • 1 1/4 avocados
  • 3 tbsp apple cider vinegar
  • 3 tsp Dijon mustard
  • Basil small handful
  • salt and pepper to taste


  • 1 1/2 cup chickpeas canned
  • 2 celery stalks chopped
  • 1/2 cup grapes chopped
  • 2 tbsp almonds crushed or whatever nuts you prefer
  • 1/4 cup red onions chopped


  • Blend all dressing ingredients in a high speed blender until smooth and add salt and pepper to taste.
  • Toss all salad ingredients in a bowl and add dressing. Stir to combine. Serve on sandwich rolls, wraps, or over greens for a salad.
