Oil Free Chickpea Waldorf Salad

Ingredients
Dressing

avocados

apple cider vinegar

Dijon mustard
Basil small handful
salt and pepper to taste
Salad
1 1/2
cup
chickpeas canned
2
celery stalks
chopped
1/2
cup
grapes chopped
2
tbsp
almonds crushed
or whatever nuts you prefer
1/4
cup
red onions chopped
Instructions
Blend all dressing ingredients in a high speed blender until smooth and add salt and pepper to taste.
Toss all salad ingredients in a bowl and add dressing. Stir to combine. Serve on sandwich rolls, wraps, or over greens for a salad.
