Multicolored Couscous Salad
Ingredients
- 1 cup dry couscous usually yellow and orange
- 1/2 red onion chopped
- 1/4 cup fresh mint
- 2 zucchini diced
- 3 stalks green onion chopped
- 3 radishes thinly sliced
- 1 tsp cumin
- 1 tsp onion powder
- 1/4 cup walnuts chopped
- salt & pepper season to taste
Instructions
- Cook couscous per package instructions.
- Combine all ingredients in a bowl and serve.
Notes
Plan Ahead – Chop veggies the day before.
Lower Fat Option – Reduce or omit walnuts.
Gluten Free Option – Use quinoa instead of couscous.
