Ingredients
  

Strawberry Mint Salad:

  • 3/4 cup uncooked quinoa
  • 1 cup fresh strawberries chopped
  • 1/4 cup pine nuts
  • 3 scallions sliced thin
  • 2 tbsp fresh mint chopped

Lemon Vinaigrette:

  • 1/4 cup fresh lemon juice
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 2 clove Garlic crushed
  • salt and pepper to taste

Instructions
 

  • Cook quinoa according to directions on the package. Once done, set aside and let cool.
  • Meanwhile, combine all ingredients for the lemon vinaigrette into a blender and blend until smooth.
  • Chop strawberries, mint, and scallions.
  • Toss together cooled quinoa with remaining ingredients and dress with lemon vinaigrette, as desired.
  • Season with salt and pepper to taste.
