Strawberry Mint Salad:

uncooked quinoa

fresh strawberries chopped

pine nuts

scallions sliced thin

Lemon Vinaigrette:
1/4

fresh lemon juice

olive oil

apple cider vinegar

Garlic
crushed
salt and pepper to taste
Instructions
Cook quinoa according to directions on the package. Once done, set aside and let cool.
Meanwhile, combine all ingredients for the lemon vinaigrette into a blender and blend until smooth.
Chop strawberries, mint, and scallions.
Toss together cooled quinoa with remaining ingredients and dress with lemon vinaigrette, as desired.
Season with salt and pepper to taste.
