Minted Strawberry and Quinoa Salad with Lemon Vinaigrette
Ingredients
Strawberry Mint Salad:
- 3/4 cup uncooked quinoa
- 1 cup fresh strawberries chopped
- 1/4 cup pine nuts
- 3 scallions sliced thin
- 2 tbsp fresh mint chopped
Lemon Vinaigrette:
- 1/4 cup fresh lemon juice
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- 2 clove Garlic crushed
- salt and pepper to taste
Instructions
- Cook quinoa according to directions on the package. Once done, set aside and let cool.
- Meanwhile, combine all ingredients for the lemon vinaigrette into a blender and blend until smooth.
- Chop strawberries, mint, and scallions.
- Toss together cooled quinoa with remaining ingredients and dress with lemon vinaigrette, as desired.
- Season with salt and pepper to taste.
