Lentil Sloppy Joes
Ingredients
- 2 cup cooked lentils (not red)
- 1 medium yellow onion minced
- 4 cloves Garlic minced
- 2 tbsp tomato paste
- 1/2 cup BBQ Sauce of your choice
- 1/4 cup ketchup
- 1/4 cup vegan worcestershire sauce
- 3 tbsp soy sauce
- 1 tsp smoked paprika
- 4 burger buns
Instructions
- Line a large skillet with water or veggie broth over medium heat. Add onion and garlic and saute until the onions begin to turn translucent.
- Add remaining ingredients and stir to combine.
- Continue cooking the mixture over medium-low heat until completely warmed through and thick, stirring occasionally – about 5-10 minutes. Serve on toasted rolls or burger buns
