Fresh Chickpea Wraps

  • Chickpea Wraps
  • 3/4 cup canned chickpeas
  • 1 cup lettuce
  • 1/3 cup carrots shredded
  • 1/3 cup red onion
  • 1/2 medium tomato
  • 1 tbsp ground flax seed
  • 1 tsp garlic powder
  • 1 tsp turmeric
  • fresh black pepper
  • 1 tsp poultry seasoning optional
  • 2 spinach tortillas or flour if you prefer
  • Sriracha Slaw
  • 1/4 cup vegan mayo
  • 1 tbsp fresh lime juice
  • 1 tbsp Sriracha
  • 3/4 cup coleslaw mix


  • To Make Slaw
  • Combine mayo, lime juice, and Sriracha to taste. Toss with slaw until lightly coated.
  • Chickpea Wraps
  • In a food processor: pulse chickpeas, carrots, red onion, flax, and seasonings until you get a crumbly mixture.
  • Heat a large pan on medium and add your chickpea mixture. Stir mixture until it lightly browns.
  • Add your chickpea mixture onto tortillas. Top with tomatoes, lettuce, and Sriracha slaw.
  • Grill your finished burritos to seal edges or just roll up and eat.


Plan Ahead – Prepare sriracha slaw and chop veggies the day before.
Lower Fat – Omit vegan mayo.
Gluten Free Option – Use gluten free tortillas instead of spinach.
