Combine mayo, lime juice, and Sriracha to taste. Toss with slaw until lightly coated.
Chickpea Wraps
In a food processor: pulse chickpeas, carrots, red onion, flax, and seasonings until you get a crumbly mixture.
Heat a large pan on medium and add your chickpea mixture. Stir mixture until it lightly browns.
Add your chickpea mixture onto tortillas. Top with tomatoes, lettuce, and Sriracha slaw.
Grill your finished burritos to seal edges or just roll up and eat.
Notes
Plan Ahead - Prepare sriracha slaw and chop veggies the day before.
Lower Fat - Omit vegan mayo.
Gluten Free Option - Use gluten free tortillas instead of spinach.
