Fresh Chickpea Wraps
Ingredients
- Chickpea Wraps
- 3/4 cup canned chickpeas
- 1 cup lettuce
- 1/3 cup carrots shredded
- 1/3 cup red onion
- 1/2 medium tomato
- 1 tbsp ground flax seed
- 1 tsp garlic powder
- 1 tsp turmeric
- fresh black pepper
- 1 tsp poultry seasoning optional
- 2 spinach tortillas or flour if you prefer
- Sriracha Slaw
- 1/4 cup vegan mayo
- 1 tbsp fresh lime juice
- 1 tbsp Sriracha
- 3/4 cup coleslaw mix
Instructions
- To Make Slaw
- Combine mayo, lime juice, and Sriracha to taste. Toss with slaw until lightly coated.
- Chickpea Wraps
- In a food processor: pulse chickpeas, carrots, red onion, flax, and seasonings until you get a crumbly mixture.
- Heat a large pan on medium and add your chickpea mixture. Stir mixture until it lightly browns.
- Add your chickpea mixture onto tortillas. Top with tomatoes, lettuce, and Sriracha slaw.
- Grill your finished burritos to seal edges or just roll up and eat.
Notes
Plan Ahead – Prepare sriracha slaw and chop veggies the day before.
Lower Fat – Omit vegan mayo.
Gluten Free Option – Use gluten free tortillas instead of spinach.
