Easy Peasy Pita Pizzas

  • Pita Pizzas
  • 2 pita breads or gluten free pita
  • 2 cup arugula
  • 1/2 tomato
  • 2-3 carrots
  • 1/4 cup oil free hummus
  • Spicy Mustard Hummus Dressing
  • 3 tbsp oil free hummus
  • 2 tbsp spicy brown mustard
  • 1-2 lemons juice
  • fresh black pepper
  • 2 tsp dried dill or parsley


  • Spicy Mustard Hummus Dressing
  • Whisk all ingredients until creamy. Add more lemon juice if necessary.
  • Pita Pizzas
  • Pre-heat your oven to 375 degrees.
  • Slice your carrots in half, place them in the oven, and grill until tender. Remove carrots and set them aside.
  • Add your pita bread to the oven for around 10-15 (make sure it doesn't burn).
  • Remove your pita breads. Layer with hummus, arugula, sliced tomatoes, and grilled carrots. Drizzle on Spicy Mustard Hummus dressing.


Tip – Toasting pita is optional.
Plan Ahead – Prepare carrots the day before.
