Chocolate Chip Banana Walnut Muffins

Ingredients
  

  • 1 cup chickpea flour
  • 3/4 cup spelt flour or use gluten free all purpose flour
  • 1/2 cup chopped walnut optional
  • 1/2 cup chocolate chips
  • 1 tbsp grapeseed oil
  • 2/3 cup unsweetened apple sauce
  • 3/4 cup coconut sugar
  • 4 mashed bananas
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 tsp cinnamon

Instructions
 

  • Pre-heat oven for 375 degrees.
  • Mix all the dry ingredients in a bowl.
  • Add the wet ingredients.
  • Stir to combine then fold in chocolate chips and walnuts.
  • Spoon batter evenly to distribute into silicone molds or greased muffin tin.
  • Bake for 20-25 minutes or until the tops are light brown. Make sure not to overcook.
