Chocolate Chip Banana Walnut Muffins
Ingredients
- 1 cup chickpea flour
- 3/4 cup spelt flour or use gluten free all purpose flour
- 1/2 cup chopped walnut optional
- 1/2 cup chocolate chips
- 1 tbsp grapeseed oil
- 2/3 cup unsweetened apple sauce
- 3/4 cup coconut sugar
- 4 mashed bananas
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1/2 tsp cinnamon
Instructions
- Pre-heat oven for 375 degrees.
- Mix all the dry ingredients in a bowl.
- Add the wet ingredients.
- Stir to combine then fold in chocolate chips and walnuts.
- Spoon batter evenly to distribute into silicone molds or greased muffin tin.
- Bake for 20-25 minutes or until the tops are light brown. Make sure not to overcook.
