Chickpea Chana Saag

  • 15 ounce can chickpeas
  • 1/2 cup vegetable broth
  • 1 1/2 cup diced tomatoes
  • 1 tbsp garam masala
  • 1 tsp garlic powder
  • 1 tsp coriander powder
  • 1 can coconut milk
  • 10 ounce bag frozen chopped spinach


  • Combine all ingredients except the chickpeas into a saute pan set to medium heat. Simmer for 6 minutes.
  • Take half the sauce and blend until smooth using an immersion blender or a conventional blender.
  • Pour the sauce back into the saute pan with the rest of the sauce and add the chickpeas. Simmer for 5 more minutes and season to taste with salt and pepper. Serve over basmati rice, if desired.


Tip – Pair with some quinoa or over a bed of fresh greens.
