Combine all ingredients except the chickpeas into a saute pan set to medium heat. Simmer for 6 minutes.
Take half the sauce and blend until smooth using an immersion blender or a conventional blender.
Pour the sauce back into the saute pan with the rest of the sauce and add the chickpeas. Simmer for 5 more minutes and season to taste with salt and pepper. Serve over basmati rice, if desired.
