Chickpea Chana Saag
Ingredients
- 15 ounce can chickpeas
- 1/2 cup vegetable broth
- 1 1/2 cup diced tomatoes
- 1 tbsp garam masala
- 1 tsp garlic powder
- 1 tsp coriander powder
- 1 can coconut milk
- 10 ounce bag frozen chopped spinach
Instructions
- Combine all ingredients except the chickpeas into a saute pan set to medium heat. Simmer for 6 minutes.
- Take half the sauce and blend until smooth using an immersion blender or a conventional blender.
- Pour the sauce back into the saute pan with the rest of the sauce and add the chickpeas. Simmer for 5 more minutes and season to taste with salt and pepper. Serve over basmati rice, if desired.
Notes
Tip – Pair with some quinoa or over a bed of fresh greens.
