Cheesy Kale & Bean Soup

  • 15 oz can navy beans
  • 1 onion chopped
  • 1 cup mushrooms sliced
  • 4 cup vegetable broth
  • 1 1/2 cup italian style tomato sauce
  • 1 tsp Italian Seasoning
  • 5 cup chopped kale
  • 1 ∕3 cup raw cashew butter
  • 4 tbsp nutritional yeast


  • Combine beans, onions, mushrooms, vegetable broth, tomato sauce, italian seasoning, and kale into a pot. Bring to a boil, reduce heat, and simmer until kale is tender – about 20 minutes. Add more vegetable broth if you like a thinner soup.
  • Stir in cashew butter and nutritional yeast. Season with salt and pepper.
