Buffalo Tots

  • 2 cup tater tots I use Trader Joe's
  • 2 cup kale
  • 1/2 cup buffalo sauce
  • 4 tbsp vegan ranch optional
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • fresh black pepper


  • Preheat oven to 400 degrees. Line baking sheet with parchment paper.
  • Place tater tots on baking sheet, sprinkle on seasoning, and place in oven for about 20 minutes.
  • While tots are cooking, steam kale (do not over cook). Set aside.
  • Remove finished tots from the oven. Toss tater tots, buffalo sauce, and ranch in a bowl until the tots are completely coated. Top kale with your tots and enjoy.


Lower Fat – Replace tater tots with 2 medium potatoes and omit vegan ranch.
Soy Free Option – Use 1 large potato instead of tater tots.
