Buffalo Cauliflower Pizza

  • 2 pita breads or gluten free pita breads
  • 1/2 canned chickpeas
  • 1/2 head cauliflower
  • 2 cup kale lightly steamed
  • 1/4 cup buffalo sauce
  • 1 tbsp vegan ranch optional


  • Pre-heat your oven to 475 degrees.
  • Line a baking sheet with parchment paper.
  • Add your cauliflower and chickpeas to baking sheet and place in the oven for 20-25 minutes.
  • Steam kale while you wait (don't over cook).
  • Remove your chickpeas and cauliflower from the oven. Toss in buffalo sauce until completely coated.
  • Drizzle a little of your ranch on pita breads. Layer with kale, cauliflower, chickpeas, and the rest of your ranch.


Tip – Toast Pita Breads for a crunchier crust.
Lower Fat Option – Omit vegan ranch.
