canned chickpeas

head cauliflower

kale
lightly steamed

buffalo sauce

vegan ranch

Instructions
Pre-heat your oven to 475 degrees.
Line a baking sheet with parchment paper.
Add your cauliflower and chickpeas to baking sheet and place in the oven for 20-25 minutes.
Steam kale while you wait (don't over cook).
Remove your chickpeas and cauliflower from the oven. Toss in buffalo sauce until completely coated.
Drizzle a little of your ranch on pita breads. Layer with kale, cauliflower, chickpeas, and the rest of your ranch.
Notes
Tip - Toast Pita Breads for a crunchier crust.
Lower Fat Option - Omit vegan ranch.
