
Buffalo Cauliflower Pizza
Ingredients
- 2 pita breads or gluten free pita breads
- 1/2 canned chickpeas
- 1/2 head cauliflower
- 2 cup kale lightly steamed
- 1/4 cup buffalo sauce
- 1 tbsp vegan ranch optional
Instructions
- Pre-heat your oven to 475 degrees.
- Line a baking sheet with parchment paper.
- Add your cauliflower and chickpeas to baking sheet and place in the oven for 20-25 minutes.
- Steam kale while you wait (don't over cook).
- Remove your chickpeas and cauliflower from the oven. Toss in buffalo sauce until completely coated.
- Drizzle a little of your ranch on pita breads. Layer with kale, cauliflower, chickpeas, and the rest of your ranch.
Notes
Tip – Toast Pita Breads for a crunchier crust.
