
Breakfast Hash Browns
Ingredients
- 20 oz frozen hash browns
- 4 cup spinach
- 1 cup red bell pepper
- 1 cup mushrooms
- 1/2 tomato
- 2-3 tsp garlic powder
- 2-3 tsp onion powder
- fresh black pepper
Instructions
- Preheat oven to 450 degrees. Line baking sheet with parchment paper.
- Place hash browns on baking sheet, sprinkle on some fresh black pepper, and place in oven for about 30 minutes, flipping half way through cooking.
- Line a large skillet with 1/4 cup water.
- Sauté red pepper, mushrooms, and tomato until almost tender. Season throughout cooking. Add in spinach and continue sautéing for another 2-3 minutes.
- Remove finished hash browns from the oven.
- Top with veggies and serve.

Plan Ahead – Chop veggies the day before.
