Breakfast Hash Browns

  • 20 oz frozen hash browns
  • 4 cup spinach
  • 1 cup red bell pepper
  • 1 cup mushrooms
  • 1/2 tomato
  • 2-3 tsp garlic powder
  • 2-3 tsp onion powder
  • fresh black pepper


  • Preheat oven to 450 degrees. Line baking sheet with parchment paper.
  • Place hash browns on baking sheet, sprinkle on some fresh black pepper, and place in oven for about 30 minutes, flipping half way through cooking.
  • Line a large skillet with 1/4 cup water.
  • Sauté red pepper, mushrooms, and tomato until almost tender. Season throughout cooking. Add in spinach and continue sautéing for another 2-3 minutes.
  • Remove finished hash browns from the oven.
  • Top with veggies and serve.


Plan Ahead – Chop veggies the day before.
Extra Calories – Add 1/2 an avocado.
