Instructions
Preheat oven to 450 degrees. Line baking sheet with parchment paper.
Place hash browns on baking sheet, sprinkle on some fresh black pepper, and place in oven for about 30 minutes, flipping half way through cooking.
Line a large skillet with 1/4 cup water.
Sauté red pepper, mushrooms, and tomato until almost tender. Season throughout cooking. Add in spinach and continue sautéing for another 2-3 minutes.
Remove finished hash browns from the oven.
Top with veggies and serve.
Notes
Plan Ahead - Chop veggies the day before.
Extra Calories - Add 1/2 an avocado.
