Banana Quinoa Pancakes

  • 1/2 cup cooked quinoa
  • 1/4 cup gluten-free oat flour or any gluten-free flour you prefer
  • 1/4 cup almond milk
  • 2 tsp flax seed
  • 1/2 ripe banana
  • 1 dash of cinnamon


  • Mash your ripe bananas and add them to a large bowl with the rest of your ingredients. Mix well.
  • Place a lightly oiled skillet on medium heat. Drop batter by large spoonfuls onto the skillet, and cook until are dry. Flip, and cook until browned on the other side. Repeat with remaining batter.
  • Top with banana slices, walnuts, and maple syrup.


Tip – Pulse oats in food processor to create oat flour.
