Oil Free Chickpea Waldorf Salad
Ingredients
Dressing
- 1 1/4 avocados
- 3 tbsp apple cider vinegar
- 3 tsp Dijon mustard
- Basil small handful
- salt and pepper to taste
Salad
- 1 1/2 cup chickpeas canned
- 2 celery stalks chopped
- 1/2 cup grapes chopped
- 2 tbsp almonds crushed or whatever nuts you prefer
- 1/4 cup red onions chopped
Instructions
- Blend all dressing ingredients in a high speed blender until smooth and add salt and pepper to taste.
- Toss all salad ingredients in a bowl and add dressing. Stir to combine. Serve on sandwich rolls, wraps, or over greens for a salad.
