Cheesy Kale & Bean Soup
Ingredients
- 15 oz can navy beans
- 1 onion chopped
- 1 cup mushrooms sliced
- 4 cup vegetable broth
- 1 1/2 cup italian style tomato sauce
- 1 tsp Italian Seasoning
- 5 cup chopped kale
- 1 ∕3 cup raw cashew butter
- 4 tbsp nutritional yeast
Instructions
- Combine beans, onions, mushrooms, vegetable broth, tomato sauce, italian seasoning, and kale into a pot. Bring to a boil, reduce heat, and simmer until kale is tender – about 20 minutes. Add more vegetable broth if you like a thinner soup.
- Stir in cashew butter and nutritional yeast. Season with salt and pepper.
