Ingredients
  

Taco Bowl

  • 1 potato medium
  • 2 tsp taco seasoning
  • 1/4 cup black beans
  • 1/4 avocado
  • 2 cup lettuce

Pico de Gallo

  • 1 tomato medium
  • 1/4 red onion
  • 3 tbsp cilantro
  • 1 tsp garlic powder
  • 1 lime juice
  • salt to taste
  • pepper to taste

Instructions
 

Pico de Gallo

  • Chop tomatoes, red onion, and cilantro. Place in a bowl.
  • Add the rest of the ingredients into the bow. Mix well until all ingredients are evenly combined

Taco Bowl

  • Preheat oven to 400 degrees.
  • Slice potato into fries and rub them with taco seasoning.
  • Bake them for around 45 minutes or throw them into an air fryer for 25 minutes.
  • In a large bowl, add cooked fries, black beans, lettuce, avocado, and pico de gallo. Enjoy!

Notes

Tip – For extra crispy fries, soak sliced potatoes in water for 20 minutes, then drain and rinse. Soaking fries removes excess starch and allows for crispy fries.
