Chop tomatoes, red onion, and cilantro. Place in a bowl.
Add the rest of the ingredients into the bow. Mix well until all ingredients are evenly combined
Taco Bowl
Preheat oven to 400 degrees.
Slice potato into fries and rub them with taco seasoning.
Bake them for around 45 minutes or throw them into an air fryer for 25 minutes.
In a large bowl, add cooked fries, black beans, lettuce, avocado, and pico de gallo. Enjoy!
Notes
Tip - For extra crispy fries, soak sliced potatoes in water for 20 minutes, then drain and rinse. Soaking fries removes excess starch and allows for crispy fries.
