Stuffed Bell Peppers

  • 1 cup cooked lentils
  • 1 cup cooked millet
  • 1 cup raw yams diced
  • 1 cup parsley chopped
  • 1 cup white onion diced
  • 6 garlic cloves diced
  • 3 red bell peppers
  • salt & pepper season to taste


  • Combine lentils, millet, yams, parsley, onion, garlic, salt and pepper in a large bowl.
  • Chop red bells in half and hollow out removing seeds and stem. Fill with mixture and place on a sheet of parchment paper on a cookie sheet. Pour 1 cup of water onto the cookie sheet.
  • Bake for 45 minutes at 350 degrees.
