Peanut Butter Dressing

  • Top your salad with your peanut butter dressing and serve.

Notes

Plan Ahead – Prepare your dressing and chop your veggies the night before.
Lower Fat – Reduce peanut butter or use powdered peanut butter instead.
Tip – The purple cabbage will stain your rice (and pretty much the entire dish), so you can sprinkle it on top after you've mixed the rest of your salad ingredients.
Tip – For quick and easy rice, try Trader Joe's Frozen Organic Brown Rice.
