Spicy Cabbage Brown Rice Salad with Peanut Butter Dressing
Ingredients
Spicy Cabbage Brown Rice Salad
- 4 cup cooked brown rice
- 1/4 purple or white cabbage shredded or cubed
- 1 large carrot grated
- 1 bell red pepper diced or chopped
- 1/2 medium red onion diced finely
- 10 oz cherry tomatoes halved
- 1/4 cup fresh cilantro chopped
- 2 cup Baby kale or any greens you prefer
Peanut Butter Dressing
- 4 tbsp crunchy peanut butter or tahini
- 2 tbsp agave
- 2 tsp ground ginger
- 2 tsp red chili flakes optional
- 2 tsp garlic powder
- 2 limes juiced
- 3 tbsp soy sauce or coconut aminos
- 2 tsp sesame oil
- 2 tsp chili powder optional
- 2 tbsp warm water optional
Instructions
Spicy Cabbage Brown Rice Salad
- Chop and dice all your veggies. Add them to a large salad bowl, along with your baby kale and cooked brown rice.
- Mix your ingredients together until well combined.
Peanut Butter Dressing
- Add your dressing ingredients into a medium bowl and whisk together until smooth. Add warm water if your dressing is too thick.
- Top your salad with your peanut butter dressing and serve.
Notes
Plan Ahead – Prepare your dressing and chop your veggies the night before.
Lower Fat – Reduce peanut butter or use powdered peanut butter instead.
Tip – The purple cabbage will stain your rice (and pretty much the entire dish), so you can sprinkle it on top after you've mixed the rest of your salad ingredients.
