For the Salad:

  • 1 head romaine chopped
  • 4 radishes sliced (optional)
  • 1 medium cucumber sliced
  • 1 red bell pepper chopped
  • 4-5 rounds small red onion

For the Dressing:

  • 1 ripe avocado
  • 1 lemon juiced
  • 1/2 tsp salt optional
  • 1/4 cup almond milk
  • 1 tsp black pepper
  • 1/2 cup fresh basil leaves
  • 1/2 cup fresh cilantro
  • 1/2 cup toasted pumpkin seeds.


  • Combine all ingredients for the dressing in a blender and process until smooth.
  • Combine all ingredients for the salad in a large bowl and toss to combine.
