Ingredients
  

Quinoa & Black Bean Salad

  • 1 cup dry quinoa rinsed
  • 1 cup water
  • 1 can rinsed and drained black beans
  • 1 bunch curly kale washed chopped, and massaged
  • 1 red bell pepper seeded and chopped
  • 1/2 red onion finely chopped
  • 3 green onions chopped
  • 1/2 cup freshly chopped cilantro

Walnut Cilantro Dressing

  • 1 cup water
  • 1/2 cup walnuts
  • 1/2 cup freshly squeezed lime juice
  • 1/2 cup raisins
  • 1/2 cup apple cider vinegar
  • 2 clove Garlic
  • 2 tbsp cilantro
  • 2 tsp ground cumin
  • 1 pinch cayenne pepper optional
  • 1 tsp fine sea salt

Instructions
 

  • Walnut Cilantro Dressing
  • Combine all ingredients in a high speed blender and blend until very smooth. This dressing will keep refrigerated in an airtight container for 7-10 days.
  • Quinoa & Black Bean Salad
  • Combine quinoa, water, and black beans in a small pot. Bring to a boil, cover, and remove from heat. Let rest until water is absorbed, about 10 minutes.
  • While the quinoa is cooking, prepare the vegetables and make the dressing (recipe follows).
  • Combine the remaining ingredients, except for the dressing, with the quinoa and toss to combine, adding dressing as desired.
