Pomegranate Chia Parfait for 2
Ingredients
Bottom Layer
- 3 tbsp chia seeds
- 2 1/2 cup non-dairy yogurt
Top Layer
- 1 1/2 cup non-dairy yogurt
- 1 cup pomegranate seeds
- 2 tbsp chia seeds
Instructions
- Combine all of the bottom layer ingredients and let sit overnight or at least a 2 hours. Add the chia yogurt to your cups.
- Blend pomegranate seeds and yogurt in a high speed blender until creamy. Pour into a bowl with 2 tbsp of chia seeds and let sit for at least 2 hours. Add your top layer to your bottom.
Notes
For toppings I added more pomegranate and dark chocolate covered chia seeds.
