Fresh Veggie Sushi Burritos

  • 2 cup cooked rice white or brown
  • 1/2 avocado
  • 1/2 cucumber
  • 1/2 carrot
  • 2 tbsp rice vinegar
  • 1 tbsp raw or coconut sugar
  • 2 nori sheets


  • Slice your veggies. Add cucumber and carrot to vinegar mixture and stir until completely coated.
  • Spread cooked rice evenly over nori sheets, making sure to leave about an inch on the opposite side your rolling.
  • Layer your cucumber, carrot, and avocado onto your rice.
  • Roll to make as round as possible. Serve with low-sodium soy sauce.


Plan Ahead – Prepare rice, slice cucumber and carrot the day before.
Lower Fat Option – Swap Mushrooms for Avocado.
