Chili Roasted Chickpeas and Asparagus
- 2 can roasted chickpeas
- 6 carrots diced
- 1/2 red cabbage sliced
- 1 lb asparagus
- 2 tbsp olive oil
- salt & pepper season to taste
- chili seasoning Simply Organic Seasoning, Mild Chili – 1 oz packet
- Place all items on a greased cookie sheet and drizzle with olive oil and salt and pepper to taste.
- Distribute the packet of seasoning over the cookie sheet and bake at 400 degrees for 20 minutes.
Extra Calories – Add 2 cup of cooked quinoa.
