Cauliflower, Sweet Potato & Mixed Bean Stew
Ingredients
- 1 can chickpeas
- 1 can black beans
- 1 can red kidney beans
- 2 onions chopped
- 5 clove Garlic chopped
- 2 medium sweet potato peeled and chopped
- 1 medium head cauliflower chopped
- 2 can diced tomatoes in sauce
- 2 tbsp curry powder
- 1 1/2 cup full-fat coconut milk
Instructions
- Rinse and drain beans. Transfer to a 6½ quart slow cooker.
- Combine all ingredients except the coconut milk into a slow cooker and set to low. Cook for 6-8 hours or until vegetables are all soft.
- Stir in coconut milk and serve.
