Carrot Cake Overnight Oats

  • 1/2 cup gluten-free oats
  • 3/4 cup non-dairy milk
  • 1/2 shredded carrot
  • 1/2 tbsp Chopped Walnuts
  • 1/2 tbsp chopped dates
  • 1 oz non-dairy yogurt
  • 1/2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon


  • Whisk together all ingredients in a medium-sized mixing bowl.
  • Spoon into a jar with a tight-fitting lid. Close and refrigerate overnight.

Tip – You can also skip the first step and just add your ingredients into your jar, close the lid and shake it up really well
