Broccoli Cheddar Stuffed Potato

Ingredients
  

Potatoes

  • 2 large potatoes
  • 1 cup steamed broccoli
  • 1 cup cheese sauce
  • 1/2 cup canned white beans
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • fresh black pepper

Cheese Sauce

  • 1/2 medium potato
  • 2 tbsp white onion chopped
  • 2 tbsp carrot chopped
  • 2 tbsp roasted red pepper
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 6 tbsp nutritional yeast
  • 2 tbsp salsa

Instructions
 

Cheese Sauce

  • Boil potatoes, onion, and carrot in a medium pot until tender. Save about 1/3 cup of water from the veggie boil.
  • Transfer veggies and water into a high speed blender or food processor. Add in the rest of your ingredients and blend until creamy. Taste and add extra seasonings if necessary.

Potatoes

  • Prepare cheese sauce while your broccoli is steaming.
  • Slice open your cooked potato and season with garlic and onion powder.
  • Once the sauce and broccoli are finished, layer them into your cooked potato.
  • Add beans and top with fresh black pepper.
