Teriyaki Veggie Brown Rice
Ingredients
- 6 oz broccoli
- 1/4 cup veggie broth
- 5 oz mushrooms chopped
- 2 cup cooked brown rice
- 1/4 cup teriyaki sauce
- 7 oz tofu
Instructions
- Drain and press the liquid from the tofu.
- Pan fry tofu until crispy and set aside.
- Steam broccoli for about 10 minutes and set aside.
- Line a large pan with veggie broth. Add mushrooms and broccoli to pan and saute until tender.
- Add tofu and teriyaki sauce to pan. Toss veggies and tofu until coated.
- Serve over brown rice.
Notes
Plan Ahead – Prepare rice the day before or use frozen brown rice.
Extra Calories – Add 1 cup of chickpeas per serving.
Soy Free Option – Combine 1 tbsp coconut aminos, 1 tbsp maple syrup, 1 tbsp lime juice, 1 tsp ginger, and 1 tsp garlic powder instead of teriyaki sauce.
Soy Free Option – Use 1/2 cup chickpeas instead of tofu.
Extra Calories – Add 1 cup of chickpeas per serving.
