Stuffed Bell Peppers
Ingredients
- 1 cup cooked lentils
- 1 cup cooked millet
- 1 cup raw yams diced
- 1 cup parsley chopped
- 1 cup white onion diced
- 6 garlic cloves diced
- 3 red bell peppers
- salt & pepper season to taste
Instructions
- Combine lentils, millet, yams, parsley, onion, garlic, salt and pepper in a large bowl.
- Chop red bells in half and hollow out removing seeds and stem. Fill with mixture and place on a sheet of parchment paper on a cookie sheet. Pour 1 cup of water onto the cookie sheet.
- Bake for 45 minutes at 350 degrees.
