Quinoa & Black Bean Salad
Ingredients
Quinoa & Black Bean Salad
- 1 cup dry quinoa rinsed
- 1 cup water
- 1 can rinsed and drained black beans
- 1 bunch curly kale washed chopped, and massaged
- 1 red bell pepper seeded and chopped
- 1/2 red onion finely chopped
- 3 green onions chopped
- 1/2 cup freshly chopped cilantro
Walnut Cilantro Dressing
- 1 cup water
- 1/2 cup walnuts
- 1/2 cup freshly squeezed lime juice
- 1/2 cup raisins
- 1/2 cup apple cider vinegar
- 2 clove Garlic
- 2 tbsp cilantro
- 2 tsp ground cumin
- 1 pinch cayenne pepper optional
- 1 tsp fine sea salt
Instructions
- Walnut Cilantro Dressing
- Combine all ingredients in a high speed blender and blend until very smooth. This dressing will keep refrigerated in an airtight container for 7-10 days.
- Quinoa & Black Bean Salad
- Combine quinoa, water, and black beans in a small pot. Bring to a boil, cover, and remove from heat. Let rest until water is absorbed, about 10 minutes.
- While the quinoa is cooking, prepare the vegetables and make the dressing (recipe follows).
- Combine the remaining ingredients, except for the dressing, with the quinoa and toss to combine, adding dressing as desired.
